Love and Healthy Food

It always takes more effort to eat healthy but not this time... I made this faster than you could microwave some horrid frozen dinner!
I love the wedge but I don't love the heaviness of the dressing... So here is a lighter side.

For ranch:

1 cup Greek yogurt
1 packet dry ranch 
Squeeze of lemon
Thin with water or milk 
Add pepper if you like:)

For the chicken:
Olive oil for your pan
A sprinkle of dry ranch on the chicken
Cook in a hot pan until dark bits appear and the chicken is carmelized on both sides. Turn burner off and finish with a squeeze of lemon.

Hope you spend more time with your feet up than in the kitchen!

Hummus Heaven

Once you have tasted homemade hummus and realize how easy it is to make... You will never want it any other way.
Hummus:
1 can chickpeas
2 cloves garlic 
Drizzle of olive oil 
Half a lemon juiced
Salt to taste
Toss all your cucumbers and crisp veggies in lemon juice and serve!

Awesome Valentines and Blizzard Day


We had a wonderful turnout despite the blizzard conditions! New jewelry, wonderful food and of course great music!
"Happier" sugar scrub hand made in small batches and smells like happy with lemon, jasmine, orange and lavender.

Girls are so fearless and my clients braved the terrible weather to come and spend some time shopping and chatting by the fire!

Breakfast dreams do come true

My breakfast dreams just came true... I totally crave the comfort of a stack of hot, syrup oozing pancakes on a cold snowy weekend morning. But than I find myself wanting a nap and thinking there has to be a better, healthier way. I refuse to go low fat or do without. So I found two great ways to have my pancakes and eat em' too! 
The first is a total no brainer... Why didn't I try this sooner! A flour-less pancake!
So simple that the boys can make it.
Two things... Kinda...
2 eggs
2 bananas
Give it a whirl in the blender (I love my mini bullet blender)
Add salt and spices ( I used cinnamon)
Oil or butter your pan and cook on a low to medium heat until golden! No nap needed! But be patient... They take a bit to brown on low.

Fast forward one weekend and I'm craving a sweet breakfast again! So, I made the same recipe but this time I was only a half a cup of coffee in and was lacking patience to wait for the golden part. I poured the whole mixture in my pan and cooked as if I were preparing scrambled eggs... To my delight, I ended up with a oatmeal looking result... And it felt like I was eating dessert! I plated it with fruit and a drizzle of honey and let me tell you it was heavenly! 
So if your in a hurry or haven't had your fair share of coffee yet, go this route!
And last but certainly not least, I realized I had not used all the batter...so I grabbed two little ramekins buttered the inside and poured the rest of the batter, filling halfway and set the oven to 400. I popped them in until they started to brown. 
Can we all scream... Breakfast! I should of taken the pick as they came out of the oven when they were all puffy! Now, I can not wait for tomorrow morning when I heat these and pour a bit of honey on top!

New on the blog! celeste m. Stack Hacks!

Easy, quick and tasty snacks! You will fight your kids for this one, so you may want to leave some for yourself in the kitchen!

Slice and core your apples, squeeze a half an orange over apples and sprinkle with cinnamon. In a bowl... (Ha, do you really need that prompt?)😋 mix peanut butter and Greek yogurt. I mixed equal parts, so a cup of each. You can add yogurt to taste. I devided mine in separate bowls with a cookie scoop and put a few topping on each. Chocolate curls and cinnamon sugar. But sprinkles would be fun! Have fun!

We Are Clevelanders We Know Winter

Being a Cleveland girl, I know winter. We have gear that would rival most Everest climbers. Even if it is just to play outside with the kids. And today was no different. With my down coat that comes to my knees, duck boots up to my knees and my 6 foot long double sided retractable ice scraper in hand... I set out to work downtown.
I decided since my boys had a snow day and I did not that I would get up at 5 a.m. And head to work early. My idea to beat the rush and the um horrid drivers...(you know who you are)
It was all going really well until I made my way to my car to find it frozen solid. Even though we cleaned the car 3 times last night in preperation for the morning, the slush got the best of me.
So being a girl I thought hmm, extension cord and hair dryer... Lol
Safe to assume guys would of gone the, hmm blow torch route:) stereotype much?... Lol
But than I remembered these cool things I read to tackle the ice! They worked for me!

*Ice-proof your windows...with vinegar! Frost on it's way? Just fill a spray bottle with three parts vinegar to one part water & spritz it on all your windows at night. In the morning, they'll be clear of icy mess. Vinegar contains acetic acid, which raises the melting point of water---preventing water from freezing! *

*Squeak-proof your wipers...with rubbing alcohol! Wipe the
wipers with a cloth saturated with rubbing alcohol or ammonia. This one trick can make badly streaking & squeaking wipers change to near perfect silence & clarity. *

*Prevent car doors from freezing shut...with cooking spray! Spritz cooking oil on the rubber seals around car doors & rub it in with a paper towel. The cooking spray prevents water from melting into the rubber!*

*De-ice your lock in seconds...with hand sanitizer! Just put some hand sanitizer gel on the key & the lock & the problems solved! *

*Fog-proof your windshield...with shaving cream! Spray some shaving cream on the inside of your windshield & wipe if off with paper towels. Shaving cream has many of the same ingredients found in commercial defoggers! *

*Keep your headlights clear...with car wax! Just wipe ordinary car wax on your headlights. It contains special water repellents that will prevent that messy mixture from accumulating on your lights - lasts 6 weeks. *
