If you love smoothies you can freeze all your prepped fruit and throw it in your blender with just a bit of juice or water. If you want to go one step further you can actually pre-purée your smoothies and freeze in ice trays then put a few cubes of each fruit or veggie in baggies. Your ready to go!
This breakfast or brunch goes together pretty quick...
Pre-scrabble your eggs and set them aside. Brown your tortillas with a bit if olive oil or butter in your pan and set aside.
Place your eggs in a pan on low... If your fruit is not pre-cut, do that right next to the stove so you can stir your eggs while you cut and plate your fruit.
Plate every thing before you grab the eggs off the warm stove:)
What a treat to have such beautiful healthy fruit! Papaya is one of my favorites!
This morning we chopped all the fruit and set out chobani greek yogurt, natures valley crushed granola bars and crushed almonds for everyone to make their own parfait. This is always a hit and the sneaky part is I get to enjoy my coffee while I watch all the kids and adults having fun!
This was fresh catch of the day, fish fry night, you could also bake it, but we mixed olive oil and a bit of butter and brushed it on our fish with just a bit of salt and pepper and pan seared it on high. We didn't realize that our fish was in the shape of a heart until the photo!
We finished it with a fresh squeeze of a Meyer lemon... If you have never had a Meyer lemon ask about them, they are the best! Much sweeter than a regular lemon.
Here is some couscous with olive oil and lemon, garnished with cucumbers, tomato, and feta cheese! This is so good hot or cold! ^
My kids eat so much more fruit if I don't put it on their plates... Not sure why but a tray of fruit always goes faster in our house:) ^
